Gluten-Free Disney Inspired Thanksgiving Menu

For some of us, the magic of Disney begins with the food. I love that aspect of the parks, because it’s something I can re-create at home.

About a year ago, I was diagnosed with Celiac disease. It’s an autoimmune disorder that treats gluten – the protein found in wheat, rye, and barley – as dangerous and attacks. Unfortunately, my overactive immune system goes a little overboard and I end up as collateral damage. Even the smallest amount of gluten can make me sick for days. No fun.

I’m not worried about traveling to Disney. Actually, it’s one of the few places I don’t worry about whether or not I’ll be able to eat safely. They’ve got this under control, but that’s another blog post. Right now we’re talking about creating a Disney-Inspired Thanksgiving menu, and because of my dietary restrictions, I’m modifying a few things to make them gluten-free. I’ve included links to as many recipies as I could from the D23 website. (You can get a free D23 membership now!)

Appetizer:

Papaya, Avocado, and Grape Salad from Boma.

This recipe is naturally gluten free, so I don’t have to do a thing to alter it! And it’s really easy to throw together, which is nice on a crazy cooking day.

Main Course:

Turkey – not just the legs!

Onion Tart from Citricos.

This recipe calls for packaged pie dough – Pillsbury just came out with a pre-made gluten-free pie dough as a substitute.

Dessert:

Apple-Caramel Pie from Whispering Canyon Cafe

The only substitution this recipe needs is the crust. It calls for a sugar cookie crust (yum!). Luckily, cookies don’t really rely on gluten for their form, so any gluten-free sugar cookie recipe will work perfectly.
